This winter root is a trusty staple in the UK. Feed these fritters to your friends and family and they won’t guess that swede is the secret ingredient!
1 large swede, peeled and grated
1 onion, peeled and sliced
100g chickpea flour (gram flour)
1/2 tsp baking powder
2 tsp curry paste or powder
1 red or green chilli, de-seeded and finely chopped
vegetable oil for frying
Sift the flour and baking powder into a bowl. Add the curry paste/powder, chopped chilli and a good sprinkling of salt. Add about 150ml of cold water to make a thick batter. Stir in the chopped onion and grated swede until well coated.
Heat a splash of oil in a frying pan and add a spoonful of batter. When it starts to brown, flip over and cook the other side.
