Swede Patties

Caroline & the kitchen team made this for volunteers last week here at Hawkwood. It was absolutely delicious, sweet and wonderful!

1 large swede chopped chunky
1 onion – chopped
1 clove garlic
½ tsp coriander seeds
3 tbs Soya sauce
1 chillie chopped (dried or otherwise) to taste
Oil
S&p
1 bayleaf

 

Steam or cook swede in small amount of water with bayleaf and coriander seeds till fairly soft – about 5 to 10 mins.

Fry onions, add garlic & chilli after a couple of minutes, till fairly soft.

Mash swede, add the onions.

If cooking in the oven,  heat the oven to very high, grease a baking tray.

Scoop a ball of mixture and squash together to form a flatish pattie shape. (about 1inch thck or a bit more) put on the try and bake for 20-30 mins till brown.

Or

Fry the patties in a pan on medium heat till browned on both sides.
